Instructions

# In the yolk bowl, whisk together Egg yolks, Milk and Vanilla extract until smooth.
# Sift in the flour, baking powder, sugar, and salt. Mix until just combined. Don’t overmix! The batter
should be thick but smooth
>> Step 2: Make the Meringue <<
# Using a clean dry bowl, beat the egg whites until frothy.
# Add cream of tartar (optional).
# Continue beating, adding a teaspoon of sugar if you like a bit more sweetness, until stiff peaks form the foam should hold its shape when lifted.
>> Step 3: Fold Gently <<
# Add ⅓ of the meringue into the yolk batter and fold gently with a spatula to loosen it.
# Add the remaining meringue in two batches, carefully folding each time until combined.
⚠️ Be gentle — overmixing will deflate the airy texture.
>> Step 4: Cook Slowly <<
# Heat a nonstick pan over low heat and lightly grease it with butter or oil.
# Using a large spoon or ice cream scoop, place 2–3 small mounds of batter in the pan.
# Add 1 tablespoon of water to the side of the pan (not touching the batter), then cover with a lid to create steam.
# Cook for 4–5 minutes, then gently flip each pancake with a spatula (they’re delicate!).
# Add another spoon of water, cover again, and cook another 3–4 minutes until golden and fluffy.

# Transfer gently to a plate.
# Dust with powdered sugar and top with berries, whipped cream, or syrup.
# Serve immediately while still warm and jiggly!

Tips for Perfect Pancakes
# Low heat is key — too high and they’ll brown before cooking through.
# Use a ring mold (optional) to help them rise taller.
# Don’t open the lid too early — the steam helps them rise.
You can make them vegan by using aquafaba (whipped chickpea liquid) instead of egg whites, and oat milk instead of dairy milk
